Healthy recipes: Majorcan ricotta cake

For every cheesecake lover out there, this spectacular Majorcan ricotta cake will be heaven on earth. It mixes all the pleasure of a creamy texture with a very Majorcan flavor only to result in one of our favorite desserts so far. Take your notebook and start writing, because you will want to hang on to this recipe!

Ingredients for your healthy Majorcan ricotta cake:
500 gr fresh Ricotta
200 gr mascobado sugar
2 lemons
6 organic eggs
1 pinch of cinnamon

  1. Preheat the oven to 180 degrees.
  2. Mix the Ricotta, mascobado sugar, eggs & cinnamon in a blender.
  3. Add the 2 lemon’s zest.
  4. Mix again.
  5. Pour into a round cake tin (approx. 20 cm) and cook for 35-40 minutes.
  6. You can top the cake with a layer of fresh marmalade or red berries coulis.
