Healthy recipes by Cal Reiet: Zucchini noodles

What is it about summer that invites us to make quick & fresh meals? If you don’t want to spend much time in the kitchen and you’re into healthy & delicious options, our zucchini noodles are a must!
Let’s start cooking!

Ingredients for 2 portions
1 zucchini
2 tablespoon of chopped dehydrated tomato
2 kalamata olives
1 tablespoon of “cashew cheese” (recipe below)
2-tablespoon extra virgin olive oil
2 pinch of salt
2 pinch of grounded black pepper
1 pinch of lemon
2 pinch of “Tap de cortí” pepper
1 tablespoon of hazelnuts cut in halves
2 leaves of basil

Cashew cheese
1 cup of raw cashews soaked minimum 2 hours (better overnight)
1 tablespoon of nutritional yeast
2 tablespoon of lemon juice
2 tablespoon of extra virgin olive oil
1 pinch of salt
1 pinch of black pepper
Filtered water

For the cashew cheese, blend all the ingredients until smooth. Add some water if you need it.

For the zucchini, form the noodles with the spiralizer.
Mix well with the cashew cheese, the dehydrated tomatoes, the Kalamata olives, the oil and the lemon. Adjust the salt and black pepper.

Present on a plate and decorate with the “tap de corti” pepper, the hazelnuts and the basil leaves.
