Raw vegan Berries Ice-cream

Eating healthier is something that more and more people are willing to do. Sometimes it seems difficult above all when it comes to desserts, sweet snacks and ice-cream. We have been told that eggs, milk, cream, sugar, chocolate and all the things that we like about sweets are unhealthy. And, yes! They actually are not good for us because our body needs to work hard to proceed these ingredients.

And if we introduce them all in once in our bodies throught a dessert, it will take a bigger effort to transform all those ingredients and to integrate them as something that gives us energy. At the end the effort is not worth (in terms of what our bodies need and what they actually receive).

BUT… there’s a good news!

Healthy desserts exist: they are made of raw ingredients and they are good for our health and bodies because they are rich in vitamins, fibers, proteins and especially when they taste super good and look amazing, too! (Be careful: it always depends on how many desserts you eat!!!). It’s not a joke: it’s something real. These desserts are made using the so-called SUPERFOODS as nuts, dried fruits, raw cacao and sweeteners, like agave syrup or coconut sugar, that are not addictive like refined sugar.

I like to create tailor made desserts that resemble to the ‘normal’ desserts. In my tiramisú, for example, there are no eggs, no cheese, no milk and no sugar. To make it, she only uses almonds, apples and coffee for the base; cashews, homemade almond milk and agave syrup for the cream and on top she puts a super natural raw cacao powder.

Here you have a nice recipe for these hot Summer days- Raw vegan Berries ice-cream.
For 2/3 portions you will need:

1 cup of frozen berries (you could use whatever other fruit you love most, just remember to make it in little pieces before freezing it)
1 cup of frozen bananas (make it in slice before freezing it)
1/2 cup of raw cashews (put it in a bowl with water for a couple of hours and rinse them before using)
1/4 cup of vegetable milk (you could use the one you love or in alternative you can also use water)
1 tablespoon of agave syrup (you can also do it without it or put some more depending on how much sweet you want it)
1 teaspoon of fresh lemon juice
1/4 teaspoon of vanilla powder or aroma
(optional)
1/2 cup of berries to use as decoration (or whatever other fruit you choose)

Put all the ingredients in a mixer and mix them at high speed for a while (this time depends on your mixer power, but you will see that it will be ready super fast). Depending on the power of your mixer you would probably need to stop mixing one time or two to help the ingredients to mix together.

You can serve it directly or save it for later. In this case, it is better to mix it a little bit more just before serving (if it has been freeze too much you can cut it in cubes and then put it again in the mixer). Put the icecream in a nice bowl or in a glass and then decorate it with the 1/2 cup of fresh fruits you saved.
