Creamy rice pudding with mango


300 g short-grain rice (it is usually sold as risotto or sushi rice)
1 litre milk of your choice
½ vanilla bean, sliced open
pinch of sea salt
100 g sweetener of choice (agave, maple syrup, coconut sugar, or anything you prefer)


In a big saucepan combine milk, the vanilla bean and salt. Bring to a boil over medium heat, then add rice and reduce heat to low.
Stir frequently, cook for about 20 minutes or until the rice absorbs most of the liquid and the texture gets creamy. When the rice is cooked, stir in the sweetener and let it cool.

There are several ways to enjoy it.
You can serve it warm or completely chilled from the refrigerator – either way it is going to be delicious.
Garnish it with small cubes of fresh mango, mint leaves and serve it with your favourite ice cream or sorbet.
