Healthy recipes by Cal Reiet – Saffron granite & Berries

Preparation time: 15 minutes / Portions: 4 / Serving temperature: cold

Ingredients

4 large strawberries cut into slices
8 blueberries cut in half
8 blackberries cut in half
4 Phisalis cut in half
4 raspberries cut in half
1 lemon’s juice
Black pepper
Fresh herb sprouts: peppermint – basil – fennel – dill
4 tablespoons Saffron granite

Optional: Sichuan Pepper – Cardamom

Preparation

1- Marinate the berries with the lemon juice, pepper and herbs. Optional Sichuan pepper and ground cardamom.
2- Let it macerate for 5 minutes in the fridge.
3- Pour the mixture into a deep bowl.
4- Place the saffron granite on top.
5- Decorate with fresh herbs.
6- Serve very cold.

Ingredients

¼ cup of filtered or mineral water
¼ cup of rice syrup or agave syrup
6 units of saffron in threads

Preparation

1- Lightly toast the saffron threads over very low heat in a pan.
2- Make a syrup with the water and the syrup.
3- Add the saffron and cook for a few minutes until obtaining a syrup with a noticeable yellow color. Place in a container and freeze.
4- Once frozen, scrape with a fork to obtain the granite.
