Healthy recipes by Cal Reiet – Whole grain spelt ginger cookies with spices

Preparation time: 1 hour 20 minutes / 10-15 minutes of cooking

The most beautiful time of the year has finally arrived. Christmas is just around the corner! And to celebrate it as it happens, we are ready to share our recipe for healthy ginger cookies for you to try at home!


2 1/2 cups whole grain spelt flour
1/4 cup of rice starch
Vanilla essence
1 egg
1 teaspoon of baking powder
1 teaspoon ground ginger
1 teaspoon ground clove
1 teaspoon ground cinnamon
1 teaspoon of nutmeg
1 pinch of salt
1 cup coconut sugar
¼ cup organic honey / rice syrup
½ cup virgin coconut oil
4 tablespoons of mineral water


1- In a blender mix the water, coconut oil and sugar.
2- Add the honey, vanilla, and whole egg. Mix until homogenized. The result should be a paste.
3- Separately, mix all the dry ingredients.
4- Add the dry ingredients to the previous mixture until the dough is formed.
5- Remove from the blender and wrap in plastic wrap or similar. Refrigerate 1 hour.
6- Spread the dough on a lightly floured table.
7- Cut the dough in figures.
8- Put them on a baking tray with non-stick paper.
9- Bake in the oven (previously preheated to 180 degrees) for 10 to 15 minutes or until golden.
10- Remove from the oven.
