Would you like to prepare something healthy with a taste of Mallorca? Today we are going to cook one of the typical dishes of the island: a ‘coca’. But we are going to do it in ‘Cal Reiet style’, using local and healthy ingredients to nourish your body.
Preparation time: 24 hours.
½ cup of buckwheat
½ cup golden flax seed
½ cup sunflower seeds
3 grated carrots
2 grated red onions
¼ cup of tamari sauce
¼ cup of extra virgin olive oil
¼ cup raisins
Pea and mint cream
New sprouts of fresh herbs
Black pitted olives
1- To activate the wheat it is necessary to hydrate it. We submerge the flax seeds and the wheat for a minimum of 4 hours.
2- Strain and wash well.
3- In a kitchen robot, we mix all the ingredients.
4- With a spatula we will stretch the paste obtained on a non-stick oven paper, the size and shape are up to you. The thickness should be at least 3 millimetres.
5- It is left to dry in an oven at a very low temperature.
6- The drying time in the oven, at about 80 degrees, will be approximately 6 hours.
7- Once it’s dry and crisp, add the chosen toppings.
8- Store in an airtight container and enjoy!
