Healthy recipes by Cal Reiet – Broccoli and quinoa salad, with sweet sesame and almonds

We’re back to do one of the things we like to do most: share healthy recipes with all of you. Today, our executive chef, Eduardo Cruz, shares the secret of one of our guests’ favourite salads: broccoli, sweet sesame salad with quinoa and almonds

Cal Reiet Healthy Recipes – Broccoli and quinoa salad, with sweet sesame and almonds

Ingredients – serves 4

– 300 grams of broccoli
– 120 grams of snow peas
– 120 grams of beans
– 50 grams of toasted almonds
– 200 grams of quinoa
– 4 spring onions
– 4 tablespoons virgin olive oil
– 4 tablespoons toasted sesame seeds

Ingredients for the sauce

– 50 grams of tahini
– 40 millilitres of water
– 1 tablespoon tamari
– 1 tablespoon honey
– 1/2 tablespoon apple cider vinegar
– 1 1/2 tablespoons mirin
– Pinch of salt

Preparation:

1. Mix all the sauce ingredients in a bowl, taste and correct according to taste.
2. Cook the broccoli, beans and snow peas separately in a pot of water. Then let them cool and dry.
3. Cook the quinoa according to the instructions on the package and leave it to cool.
4. Assemble the dish by making a base with the quinoa and mixing with julienned spring onions, lime juice, olive oil and lime zest.
5. Mix the broccoli, snow peas and beans with the vinaigrette prepared earlier and place on top of the quinoa.
6. Sprinkle toasted almonds and sesame seeds on top.
